Took a break

I have taken a break from journaling and from the keto diet.  This way of eating had left me feeling like a zombie lately, walking around in a fog, feeling emotionless, and I had a hard time carrying on a conversation.

So I did a little experiment and I had a caramel.  Within minutes I felt much better, more like myself.  I know that this is from the sugar.  I don't know why I am having such a difficult time adapting this time around, I know I didn't feel like this 7 years ago when I did Atkins successfully.

My health coach recommended upping my carbs to 70-80 grams with sweet potatoes and other low glycemic starches.  Well, after I ate that caramel, that set off the candy cravings just like I thought it would.  I decided to "enjoy" my Christmas with some sweets and other things that I have been missing.

I have not binged or really overdone it as far as I'm concerned.  I did have some See's candy today, 3 pieces to be exact and it was right after lunch so I made sure to have something else in my stomach.  I tested my blood about 2-3 hours after and it was 112.  I believe that's kind of high.

Today I am actually cooking what was supposed to be our Christmas dinner (we ate out Christmas Eve and Christmas) and we were with friends yesterday having a late Christmas.  So we will be having ham 3 days in a row but that's A-Okay with me.

Today's eats:

Meal 1 - 2 eggs scrambled in bacon fat
2 slices of Pederson's uncured bacon

Meal 2 - Chipotle salad with
              Romaine lettuce
              Steak
              Grilled peppers and onions
              Mild salsa
              Sour cream
              Guacamole
              3 pcs See's candy
              1 peanut butter cookie

Meal 3 - About 8 oz. of ham
              1/2 cup sweet potato
               1 cup brussels sprouts
               3 pcs See's candy

Going to get the See's out of my system because I am back on track tomorrow, starting with the gym since I haven't been since the 21st :(

Keto Day 19 and 20

I've decided that I need to start creating a schedule to manage all this time off I have!  I am such the procrastinator and I'm so not disciplined when it comes to my time.  I sometimes try to justify that I am on vacation and that I should be relaxing and taking it easy but I have a lot to do!

I'm still sticking to keto and I see some changes in my blood glucose levels and I hope that keeps happening.  I have not been as strict as I should be but that will change come January because I plan to join a 30 day keto challenge!

Monday's eats:

Meal 1 - 2 eggs scrambled in bacon fat
              2 slices Pederson's uncured bacon
              2 cups organic baby spinach
1 cup tulsi tea with 2 tbsp. coconut oil

Meal 2 - 1/2 cup peanuts
              1 pkg. seasoned seaweed

Meal 3 - 2 El Pollo chicken thighs

Meal 4 - 3 uncured hot dogs cooked in 1 tbsp. butter
              1 medium hass avocado

I hit 197 grams of fat, 200 is my goal

Glucose level:  81

Today's eats:

Meal 1 - 2 eggs scrambled in bacon fat
              2 slices Pederson's uncured bacon
              2 cups organic baby spinach
1 cup tulsi tea with 2 tbsp. coconut oil

Meal 2 - Chipotle salad with:
              steak
              fajita vegetables
              mild salsa
              sour cream
              guacamole

Meal 3 - 1/2 cup peanuts
              1 pkg. seasoned seaweed

Meal 4 - Iceberg lettuce salad with:
              grilled chicken
              2 boiled eggs
              sprinkle of Mexican cheese
              2 tbsp. bleu cheese dressing

Glucose level:  69  (first time I've seen the 60s!)

I'll be honest, this way of eating has not been difficult since day 3.  That is the day I can say I had the willpower to say no to sweets.  I have been tempted many times but keep reminding myself that I am trying to keto adapt and if I take even one taste of anything, it will set me back to square one.

Once my tastebuds have had that taste of sweet, I would have no control, my pancreas would be vomiting insulin (as my coach stated), and I would immediately be kicked out of ketosis.  All that hard work is not worth one bite of anything.  I keep telling myself when I get healthy and I am keto adapted I can have some sweets once in awhile and it won't be so hard to get back into ketosis.

All this I tell myself as I am baking and making treats for other people!  My weight loss has not budged past the 4 lb. mark and that's okay with me, I know it's because I am not working out like I should.  I'm supposed to be exercising at least 4-5 times a week - this is where the need for that schedule comes in!

Keto Day 17 and 18

I have been experiencing a little bit of brain fog and I suspect it's from eating peanuts but I am doing an experiment today to see if that's the case.

Today's eats:

Meal 1 - 1 cup tulsi tea with 2 tbsp. coconut oil
               10 oz. T-bone steak
               3 eggs fried (IHOP)

Meal 2 - 6 chicken wings (leftover Wing Stop)
              2 tbsp. bleu cheese dressing
              1/4 cup peanuts

Meal 3 - (3) 1/3 lb. hamburger patties
               grilled onions
               pickles
               jalapenos
               iceberg lettuce bun

Glucose level:  79 (yippee!)

Saturday's eats:

Meal 1 - 2 eggs scrambled in bacon fat
              2 slices Pederson's uncured bacon
              2 cups baby spinach
1 cup tulsi tea with 2 tbsp. coconut oil

Meal 2 - 1/4 cup low salt pistachios
              1/4 cup peanuts

Meal 3 - 8 chicken wings
              3 tbsp. bleu cheese dressing
              6 celery sticks

Meal 4 - 8 oz. prime rib
              1 cup steamed broccoli
               Couple bites of peanut slaw

Glucose level:  92

I've had a few things making me wish I had started this ketogenic thing after the holidays and not before:  See's candy, decorated sugar cookies, macarons, the fact that I'm baking and making goodies that I cannot even taste.  I have to rely on my husband as my "taster".  But then again I have to celebrate that I have stuck with this for 18 days now, 17 days longer than I have stuck to anything over the last 7 years.

Keto Day 15 and 16

Have you ever felt like time is your enemy?  It seems like the more time I have, the less I get done.  I have been sleeping in till about 6 every morning when I am usually up at 4:45 on the weekdays, not that it's bad but I should be accomplishing a lot if I'm going to bed at 10!

I had fully intended to go to the gym Thursday morning but ended up reading an e-book, doing research, and cleaning.  I finally made it around 10:30 and here's what I did:

15 minute warm up on the elliptical
assisted pull up machine - 8 pull ups at 60 lbs
8 chin ups at 60 lbs
10 pull ups at 80 lbs
10 chin ups at 80 lbs
chest press machine - 3 sets of 8 reps at 45 lbs
bicep machine             3 sets of 8 reps at 10 lbs
stretch cage

I felt like I could do more, especially with the pull up machine - for some reason I felt much stronger than I did last time.

Thursday's eats:

Meal 1 - 2 eggs, scrambled in bacon fat
              2 slices Pederson's uncured bacon
              2 cups organic baby spinach

Meal 2 - 1/2 cup low salt pistachios
              1/4 cup peanuts

Meal 3 - 4 grilled chicken wings
              2 tsp. tapatio

Meal 4 - 4 oz. raw ahi tuna
              green onions
              jalapenos
              seaweed salad
              cucumbers
              spring mix
               seaweed
1 cup tulsi tea with 2 tbsp. coconut oil

Glucose level:  100

Today's eats:

Meal 1 - 2 eggs, scrambled in bacon fat
              2 slices Pederson's uncured bacon
              2 cups organic baby spinach

Meal 2 - Chipotle salad with
              lettuce
              steak
              fajita vegetables
              mild salsa
              sour cream
              guacamole

Meal 3 - 1/2 cup low salt pistachios
              1/2 cup peanuts

Meal 4 - ElPollo Loco
               2 chicken thighs
              1 cup broccoli
               1 cup garden salad
              1 tbsp. bleu cheese dressing

Glucose level:  122 (WTF)
Ketone level:    0.2  (again, this has not changed at all WTF)
Weight:  -4 lbs

I notice that my chest is shrinking (yes!).  That makes me happy; with all this weight gain I was gaining in that area and I am used to having a smaller chest.

So, my numbers as far as glucose and ketones are getting worse but my weight is going down.  I seems to notice a correlation with doing a workout the day before as far as elevated glucose.

Keto Day 12, 13, and 14

I'm not gonna lie, this week has been a little challenging on the keto front.  I still have not "cheated" technically, I haven't had any intentional carbs, meaning bread, pasta, rice, sweets, or any kind of sugar.  BUT I've had cravings for nuts and salty things and I've given in to eating pistachios more often than I should.

Today's eats:

Meal 1 - 2 eggs scrambled in bacon fat
              2 slices Pederson's uncured bacon
              2 cups organic baby spinach

Meal 2 - 1 cup spicy pork rinds
               2 tbsp. organic sour cream

Meal 3 - 2 uncured hot dogs
              1 tbsp. regular mustard
              3 jalapeno olives
              3 homemade chicken wings
              1 tsp. tapatio

Meal 4 - 1 cup low salt pistachios

Meal 5 - 6 homemade chicken wings
              2 tsp. tapatio
              1/2 medium hass avocado
1 cup tulsi tea with 2 tbsp. coconut oil

Glucose level:  86
I also walked about 2 miles today but no weights

Tuesday's eats:

Meal 1 - 2 eggs scrambled in bacon fat
              2 slices Pederson's uncured bacon
              2 cups organic baby spinach

Meal 2 - 2 string cheese

Meal 3 - 5 homemade chicken wings
              2 tsp. tapatio
              1/2 avocado

Meal 4 - 1/2 cup low salt pistachios

Meal 5 - 2 cups iceberg lettuce
              2 boiled eggs
              2 oz. chicken thighs
              3 tbsp. bleu cheese dressing
1 cup tulsi tea with 2 tbsp. coconut oil

Glucose level:  88

Monday's eats:

Meal 1 - 2 eggs scrambled in bacon fat
              2 slices Pederson's uncured bacon
              2 cups organic baby spinach

Meal 2 - 2 string cheese

Meal 3 - 4 slices uncured salami
              1 oz. aged gouda cheese
              1/2 avocado

Meal 4 - 1 cup pork rinds
              2 tbsp. organic sour cream
              1/2 cup low salt pistachios
1 cup tulsi tea with 2 tbsp. coconut oil

Meal 5 - Stacked hamburger
              (2) 1/3 pound patties
              iceberg lettuce
              pickles
              grilled onions
              jalapenos

Glucose level:  91

Glucose levels have been all over the place because of what I'm eating, my weight has not gone down anymore.  I know I've been eating some hidden carbs, probably from the nuts and dairy.  It's going to be more challenging to be strict because I'm off work for 3 weeks and when I'm home, I'm always wondering "what can I eat".

Also, I need to step up the workouts, I've really been slacking in that department!

Keto Day 11

I had full intended to get up early and go to the gym this morning but it just didn't happen that way.  I did get up at 6:30 but I had to get ready to go to a cooking presentation in Costa Mesa.

The presentation was great, it was taught by a chef from Tuscany, Italy named Sandra Lotti.  She demonstrated how to prepare a tomato bread soup (pappa al pomodoro), porcini mushroom risotto, a pork shank with broccoli rabe, and an orange olive oil cake with crème anglaise.

I could only eat the pork shank and broccoli rabe and I brought the cake home for my husband.

Today's eats:

Meal 1 - 2 eggs scrambled in bacon fat
              2 slices uncured bacon
Tulsi tea with 2 tbsp. coconut oil

Meal 2 - the pork shank with broccoli rabe

Meal 3 - 5 leftover chicken wings
               2 tbsp. bleu cheese dressing
              1/2 cup low salt pistachios

Meal 4 - 4 oz. boneless ribeye steak
              1/2 medium avocado

Glucose level:  93 ( I knew it would be higher today because I ate so bad yesterday)

However, I am down a total of 4.4 lbs.  I know I shouldn't be weighing myself everyday but I cannot help myself.  One of these days I will post my starting weight - too embarrassed right now.  I have a body fat percentage of somewhere between 36-39% which I would like to see come down to about 25%.

I felt kind of foggy today for most of the day and when I went grocery shopping this afternoon I had some craving for chocolate.
