Keto Day 12, 13, and 14

I'm not gonna lie, this week has been a little challenging on the keto front.  I still have not "cheated" technically, I haven't had any intentional carbs, meaning bread, pasta, rice, sweets, or any kind of sugar.  BUT I've had cravings for nuts and salty things and I've given in to eating pistachios more often than I should.

Today's eats:

Meal 1 - 2 eggs scrambled in bacon fat
              2 slices Pederson's uncured bacon
              2 cups organic baby spinach

Meal 2 - 1 cup spicy pork rinds
               2 tbsp. organic sour cream

Meal 3 - 2 uncured hot dogs
              1 tbsp. regular mustard
              3 jalapeno olives
              3 homemade chicken wings
              1 tsp. tapatio

Meal 4 - 1 cup low salt pistachios
              
Meal 5 - 6 homemade chicken wings
              2 tsp. tapatio
              1/2 medium hass avocado
               1 cup tulsi tea with 2 tbsp. coconut oil

Glucose level:  86
I also walked about 2 miles today but no weights

Tuesday's eats:

Meal 1 - 2 eggs scrambled in bacon fat
              2 slices Pederson's uncured bacon
              2 cups organic baby spinach

Meal 2 - 2 string cheese

Meal 3 - 5 homemade chicken wings
              2 tsp. tapatio
              1/2 avocado

Meal 4 - 1/2 cup low salt pistachios

Meal 5 - 2 cups iceberg lettuce
              2 boiled eggs
              2 oz. chicken thighs
              3 tbsp. bleu cheese dressing
              1 cup tulsi tea with 2 tbsp. coconut oil

Glucose level:  88

Monday's eats:

Meal 1 - 2 eggs scrambled in bacon fat
              2 slices Pederson's uncured bacon
              2 cups organic baby spinach

Meal 2 - 2 string cheese

Meal 3 - 4 slices uncured salami
              1 oz. aged gouda cheese
              1/2 avocado

Meal 4 - 1 cup pork rinds
              2 tbsp. organic sour cream
              1/2 cup low salt pistachios
              1 cup tulsi tea with 2 tbsp. coconut oil

Meal 5 - Stacked hamburger
              (2) 1/3 pound patties
              iceberg lettuce
              pickles
              grilled onions
              jalapenos

Glucose level:  91

Glucose levels have been all over the place because of what I'm eating, my weight has not gone down anymore.  I know I've been eating some hidden carbs, probably from the nuts and dairy.  It's going to be more challenging to be strict because I'm off work for 3 weeks and when I'm home, I'm always wondering "what can I eat".

Also, I need to step up the workouts, I've really been slacking in that department!

Keto Day 11

I had full intended to get up early and go to the gym this morning but it just didn't happen that way.  I did get up at 6:30 but I had to get ready to go to a cooking presentation in Costa Mesa.

The presentation was great, it was taught by a chef from Tuscany, Italy named Sandra Lotti.  She demonstrated how to prepare a tomato bread soup (pappa al pomodoro), porcini mushroom risotto, a pork shank with broccoli rabe, and an orange olive oil cake with crème anglaise.

I could only eat the pork shank and broccoli rabe and I brought the cake home for my husband.

Today's eats:

Meal 1 - 2 eggs scrambled in bacon fat
              2 slices uncured bacon
              Tulsi tea with 2 tbsp. coconut oil

Meal 2 - the pork shank with broccoli rabe

Meal 3 - 5 leftover chicken wings
               2 tbsp. bleu cheese dressing
              1/2 cup low salt pistachios

Meal 4 - 4 oz. boneless ribeye steak
              1/2 medium avocado

Glucose level:  93 ( I knew it would be higher today because I ate so bad yesterday)

However, I am down a total of 4.4 lbs.  I know I shouldn't be weighing myself everyday but I cannot help myself.  One of these days I will post my starting weight - too embarrassed right now.  I have a body fat percentage of somewhere between 36-39% which I would like to see come down to about 25%.

I felt kind of foggy today for most of the day and when I went grocery shopping this afternoon I had some craving for chocolate.

Keto Day 9 and 10, back to the gym after 10 days off!

It's Saturday and I actually made it to the gym this morning!  I warmed up with a one mile walk on the treadmill and then did a little circuit:

Assisted pull up machine  6 pull ups at 60 lbs
                                          6 chin ups at 60 lbs
                                          8 pull ups at 80 lbs
                                          8 chin ups at 80 lbs

Chest press machine        3 sets of 8 reps at 30 lbs

Bicep curl machine           3 sets of 8 reps at 20 lbs

Stretch cage                     5 min.

This is nowhere near the work out I was doing for the past 5 years but I've been told I was
just damaging my adrenals by pushing myself that hard.  All of the exercises I did today were very slow and intentional whereas boot camp had been nothing but high speed, high interval and heavy weights to keep your heart rate elevated.

Before I worked out I had breakfast and here's what today's eats have been so far:

Meal 1 - 2 eggs scrambled in bacon fat
              2 slices Pederson's uncured bacon
              2 cups organic baby spinach

Meal 2 - Post gym
              1/2 cup low salt pistachios
               1 pkg Korean seaweed strips

Meal 3 - 6 chicken wings in buffalo sauce
              4 celery sticks
              2 tbsp. bleu cheese dressing

Meal 4 - Keto popsicle (coconut cream, cinnamon, stevia)

Meal 5 -

Glucose level - 89

Weight is -3.2 lbs.  I saw a number on the scale today I haven't seen for probably a year.
I am not doing this to lose weight but to heal my damaged metabolism and if I do lose
weight, it's a bonus.

Friday's eats:


Meal 1 - 2 eggs scrambled in bacon fat
              2 slices Pederson's uncured bacon
              2 cups organic baby spinach

Meal 2 - 1/2 cup low salt pistachios

Meal 3 - Grilled chicken leg and thigh
               1/2 medium hass avocado

Meal 4 - 1 pkg Korean seaweed

Meal 5 - Korean barbeque consisting of
              beef brisket
              pork belly
              top sirloin
              cucumber pickles
              salad
              1/2 boiled egg

Glucose reading - 86

I am off to see a movie (looking at Arrival, Allied or Dr Strange)!

Keto Day 6, 7, and 8

Wow time flies.  I never knew how hard it would be to keep up this journal!

Again, I have to work backward because that's just how my memory works these days.

Thursday's eats:

Meal 1 - 2 eggs, scrambled in bacon fat
              2 slices Pederson's uncured bacon
              2 cups baby spinach

Meal 2 - 1/2 cup low salt pistachios
               these are not technically keto but I am having a problem with being hungry
               mid-morning and this is the only thing that seems to satisfy me

Meal 3 - Grilled chicken leg and thigh
               1 medium hass avocado
              
Meal 4 - 1 cup pork rinds
               1/4 organic sour cream
               tapatio
               1 pkg seasoned seaweed

Meal 5 - 4 oz. raw ahi tuna
               1 tbsp. green onions
               2 tbsp. cucumber
               3 tbsp. sesame oil
               1 tbsp. masago
               2 tbsp. ginger
               2 cups spring mix

Glucose reading:  88

Wednesday's eats:

Meal 1 - 2 eggs, scrambled in bacon fat

              2 cups baby spinach

I haven't been really strict again for the past 3 days but I am doing what feels right
for my body.  I haven't had any moments of weakness.

Today I actually filled candy bowls for our staff meeting and didn't even think about taking any when MOST of it was tootsie rolls.

I have to check in with my coach tomorrow, she will be primarily looking at my glucose readings.  Oh, I also bought keto sticks and tried it this afternoon, it came out dark pink which is moderate.

Keto Day 3, 4, and 5

I've missed a couple of days for no really good reason, just stuff going on and being forgetful.  I have to work backward to figure out what I ate on Sunday and Saturday!

Today's eats:

Meal 1 - 2 eggs, scrambled in bacon fat
               2 slices Pederson's uncured bacon
               2 cups organic baby spinach

Meal 2 - 1/2 cup low salt pistachios (not on the plan but I was hungry and that's all I had)

Meal 3 - 2 large grilled chicken drumsticks
               1 large hass avocado

Meal 4 - haven't decided yet

Glucose reading:  83


Sunday's eats:

Meal 1 - 2 eggs, scrambled
               4 pcs of regular bacon (we ate out)

Meal 2 - I honestly don't remember

Meal 3 - 2 large grilled chicken drumsticks
              1 medium hass avocado

Glucose reading (taken 1 hour after breakfast):  75

Saturday's eats:

Meal 1 - 3 eggs, scrambled in bacon fat
               2 slices Pederson's uncured bacon

Meal 2 - 6 oz. raw ahi tuna
               1 tbsp. green onions
               1 tbsp. cilantro
               1 tbsp. masago
                2 tbsp. seaweed salad
                2 cups spring mix
                3 tbsp. sesame oil

Meal 3 - 6 oz. grilled skirt steak
               2 cups spring mix
               4 cherry tomatoes
               2 tbsp. homemade bleu cheese dressing

Ketones reading: 0.2

I will be testing ketones once a week and glucose upon waking - I did it after breakfast on Saturday because I had just bought the strips and wanted to see if they worked.

I have had bouts of feeling like I had low blood sugar but I have not tested it to see if it really is low (those test strips are really expensive)!

I "cheated" on Saturday afternoon when I felt low and had a tbsp. of peanut butter.  That staved off the low blood sugar but I immediately began craving carbs, like I was going to do more damage than the peanut butter but I had to remind myself if I do that, I will have to start ALL OVER AGAIN.  That's how ketogenics works!

I have not been as strict as my health coach has mapped out for me but I am "easing" myself into this, I think I'm doing pretty well being that I've never stuck to anything for more than 2 days for the past 8 years!

Keto Day 2

When I first decided to adopt a ketogenic diet I made sure to eat most of the foods I was going to miss.  These foods included special pastries from Solvang, See's candies, sushi, cookies, chai lattes, honey crisp apples, among others.  I was actually grieving as I was eating them thinking, "This is the last time I am going to eat this."

It's kind of silly when I think about it, but now that I'm on day 2 I'm not thinking of all the food I can't have.  My husband was sweet enough to bring home a couple of Tootsie rolls because he knows I love them (he doesn't know yet about my new venture - I haven't told him because of all the previous failures to stick to something).  The candy is sitting on top of a cabinet here in my dining room.

One thing, a major thing, I noticed today was that I had exactly two hot flashes.  For the past 3 months I have been suffering through severe hot flashes, they were more like sweat flashes.  I timed them once and they were averaging 3 times an hour!  I was miserable, hot, sweaty and the only time I didn't notice was when I was busting my ass at the gym.  Today, two hot flashes, one this morning and one this evening when I had a cup of tea.  No sweat, and they lasted maybe a minute.  Now if that's not enough to keep me going.

Oh, one more thing - I noticed before that they were worse when I ate SUGAR!

Today's eats:

Meal 1 - 3 eggs, scrambled
               2 pcs Pederson's uncured bacon
               Tulsi tea with 2 tbsp. coconut oil

Meal 2 - 2 large chicken drumsticks
               1 med. avocado

Meal 3 - 2 oz. hard cheese
               2 tbsp. peanut butter (not allowed but I had cravings)

Meal 4 - 2 Oscar Meyer select uncured hot dogs
               2 tbsp. regular mustard
              Tulsi tea with 2 tbsp. coconut oil

Glucose level:  unknown (got my monitor today so I will try to take it tomorrow)

I had some cravings today like I said but they went away with the peanut butter.  No headaches, maybe a little bit of mental fog.  I have not felt any symptoms of low blood sugar.  Not really supposed to be weighing myself but I was down 0.6 pounds today.

On being unfrumpy and Keto Day 1

I know unfrumpy is not in the dictionary. No other suffix sounds like it goes with frumpy other than un- to convey the meaning of "not frumpy".

I have a fear of being frumpy.  I have to face that I am in my fifties, there is nothing I can do about that, but I can control the frumpiness.

My weight is headed toward frumpiness (also not in the dictionary).  This started about 5 years ago with some rather traumatic events in my life.  I won't go into details right now but I started to gain weight - and fast.

After about 2 years and a 20 pound gain I joined a boot camp program.  In spite of working out to the tune of 400-500 calories burned about 5 times a week, I continued to gain another 20 pounds over the next 3 years.  Something needed to change with the way I was eating.

An internet search led me to decide to adopt the ketogenic diet.  The traditional eating and diet plans, tracking macros, counting calories, etc. does not work for me as I have something seriously and metabolically wrong with me.

So, I started a ketogenic diet today and I'm going to use this blog as a way to track meals, glucose levels, emotions, and physical changes. 

As you will see, my food choices are boring and probably repetitive but I'm putting this out there and myself out there in hopes that what I'm going through may help someone else.

Meal 1 - 2 pcs of Pederson's uncured bacon
               3 eggs, scrambled in the bacon fat
               2 cups of spinach
               1 cup Tulsi tea with 2 tbsp. of coconut oil

Meal 2 - 2 large organic chicken drumsticks, grilled
               1 large hass avocado

Meal 3 - 2 Oscar Meyer Select uncured hot dogs
               2 tablespoons regular mustard
               2 string cheese

Meal 4 - 1 cup raw ahi tuna, cubed
               2 cups spring salad mix
               3 tablespoons sesame oil
               1 tbsp. green onions

Glucose reading:  Unknown

The ketogenic diet is approximately 75-80% fat, 15-20% protein and 5% carbohydrate.  This goes against anything a doctor or dietician would probably recommend but I know this way of eating will probably work for me as I was on Atkins 8 years ago and it worked wonders for me!

Today I felt fine all day, all the fat kept the hunger at bay until I got home from work and that's when I had the hot dogs and string cheese because I was starving!  The last time I did this I had terrible cravings, headaches, and felt light-headed.  It was miserable to be honest, and I wondered why I had done that to myself.  After 3 days, I felt much better!
